This was a first playthrough without using Infinite Ammo Unlocks. When you’ve beaten the game once on Normal with S-Rank you get a pistol with Infinite Ammo that would make this A LOT faster. This video is what a first playthrough without these unlocks would look like, but it can definitely be done much faster with infinite ammo. On Assisted Mode it would also be faster, but to earn the gold trophies and S-Ranks you must play on Standard Difficulty.
